How to Cut Beef Steaks from a Whole Primal

Find out how easy it is to portion your own meat and save

Most people buy their meat pre-sliced these days, but there is another option where you can save money by buying a whole primal.

A primal is a piece of meat that has not been cut further into individual cuts of meat. When slicing steaks from a whole primal the first thing you need to do is determine which way the grain is running. We need to cut across the grain to shorten the meat fibres for tender cuts of beef.

Once you determine which way the grain is running, position the primal so you cut across it and with a sharp knife determine the thickness and cut with a slicing action so you don't tear or bruise the meat.
